Mrs. Geraldine’s Ground Beef Casserole, This recipe came from a local church fund raising cook book. Mrs. Geraldine is a good friend of the family. She reminds me so much of Mrs. Clause, that I can’t help but smile every time I think of her. This recipe freezes well. Do not bake before freezing. Just put it together, freeze it, thaw it and cook., I have made this recipe several times. Am making it again tonight. I seldom follow recipes exactly as they are written unless they have lots of spice and ingredients. This is one where you can play around with quite a bit. Yes its a little bland. So just added garlic and your favorite spices. I added garlic powder, allspice, epicure beef and steak seasoning. used coconut sugar instead of brown sugar. I always mix the mushroom soup with the pasta. This casserole is delicious. And yes, take a few minutes to bake it in the oven once its assembled. It is definitely worth the extra few minutes., I’m new to this whole cooking business and this recipe turned out perfectly. My husband and sister gave it a great review and asked me to make it again. I did use fresh mushrooms. I’m not a fan of mushrooms so I diced them up. Delicious and I may make this again in a week.

Brown Meat in Large Skillet or Dutch Oven. |

Add Onions, Pepper and Celery and Simmer For 15 Minutes. |
