Carrot Orange Muffins

    Had some over ripe oranges on my counter and am isolating for covid-19 pandemic. Felt bad letting any food go to waste at this time. Used what I had on hand, only white all purpose flour and granola instead of oats. They turned out lovely! I feel good knowing I was able to avoid any food waste.

    Blend Flours, Oatmeal, Sugar, Baking Powder, Baking Soda and Salt. Add Raisins; Mix So They Are Coated.

    Combine Carrots and Orange Rind; Add to Flour Mixture.

    Combine Beaten Eggs, Oil and Orange Juice.

    Sir Into Dry Ingredients Until Well Mixed.

    Fill Lined Muffin Cups 2/3 Full.

    Bake at 400 For 20 Minutes.
