Uncle Bill’s Beef Roast in a Slow Cooker, I made this recipe just 2 days ago using several of my original recipes. Made various modifications and additions to have this turn out so tasty., I have been using this recipe for 10 years did a review when I first made it and saw that was 2009 lol and still love it. I have had to substitute ingredients over the years at times such as frozen sliced carrots when I didn’t have fresh and extra canned mushroom when I had no fresh ones and it turned out great, The secret to Uncle Bills roast is the gravy it makes. I’m still not a slow cooker fan and normally use a dutch oven, bring the ingredients to a boil then put it in a 225 degree oven for six hours, turning as suggested. A GREAT recipe!, This was divine. used some minced garlic in lieu of cloves, but other than that, I followed the recipe to a T. As for cooking, my roast was closer to 4lbs and having read some reviews, I decided to put my slow cooker on high. Perfect. I put the celery in at 5 hours and we ate in 6. Soooo, so, so good. What a great way to bring in Fall. Thank you so much!

Heat Olive Oil on Medium-High Heat in a Heavy Bottom Frying Pan. |

Sear and Brown Roast on All Sides. |

Using a Narrow Sharp Paring Knife, Punch Holes in the Roast at Various Intervals to About 1 1/2 Inches in Depth. |

Stuff Each Hole With One Piece of Bacon and One Piece of Garlic, Push Down Into the Cut. |

Place Roast in a Slow Cooker Set on Low Heat. |

Add Water, Bits and Pieces Mushrooms Including Liquid, and Mushroom Soup. |

Sprinkle Onion Soup Mix Over the Roast. |
