Low-Carb Crustless Ham & Broccoli Quiche, A friend who is low-carbing it gave me this recipe I think she got it from a low-carb website; I’m not sure Use your imagination to come up with filling ingredients – this is simply my favorite variation , Very nice basic low carb quiche recepie I did make a few changes though to use up some Easter dinner left-overs, so I won’t give it a star rating I chopped up my leftover ham and used leftover parmesean asparagus instead of broccoli I didn’t have any cream so used half and half I also subbed swiss cheese for the cheddar It was delicious and along with a salad made the perfect dinner for my diabetic hubby and I , This was delicious!! Both my husband and I loved it used bacon in place of the olive oil and ham and added just a few halved cherry tomatoes Will be making this again and again!
