Au Gratin Potatoes,This au gratin potatoes recipe makes the best au gratin potatoes I have had yet.,I made this for Easter 2021. It turned out really well–maybe the best au gratin potatoes I have made. used a combo of red and russets, and did not peel all the potatoes (some of them I did.) used only 1% milk, 3 cups, as that was what I had on hand. used sharp yellow and white cheeses. The cheese did not melt all the way, even though I added it immediately after taking the pot off the burner. This did not prove to be a problem, however. I also used garlic salt to season it. It was very very good. I did not give it 5 stars just because this dish is labor intensive, as au gratin potatoes from scratch are.,I guess its hard to give a straight 5 star review when youve tweaked the recipe but here we go! The potatoes turned out delicious and were a huge hit. I read other reviews before making and thats what really made these great. The thing I loved about the recipe is you make the cheese sauce separate, thats all your flavor of the whole dish, taste it! If its bland, guess what?! Your potatoes will be bland. Season the sauce if it doesnt how you want the dish to taste! The key to not having soupy potatoes is to turn the heat up (MH) and wish constantly till it thickens, then turn off and add cheese (as another person pointed out). I added garlic pepper seasoning, paprika and cayenne. I also used half white cheddar and medium cheddar (more than what it called for) and used 2 1/2 cups milk and 1 1/2 cups cream. I chose not to preboil and cooked them for two hours covered and broiled uncovered at the end to crisp just a little. They turned out great!

When Cool Enough to Handle, Peel and Dice Into 1/2 Inch Pieces. |

Put Potatoes in 3 Qt Round Casserole or Rectangular Baking Dish. |

in a Large Saucepan, Melt Butter Over Medium Heat. |
