Fast Microwave Lemon Meringue Pie,Once I tried this micro version of making my lemon pie filling I never went back to the old stove top method. Fast, clean and no one can tell the difference.,I’ve been using the same recipe for lemon meringue pie since I was a teenager (over 40 years), but I’ll probably use this recipe from now on. It was quicker and easier than my old recipe and tasted just as good. It also set up very nicely, and the ratio of filling to meringue was perfect. The only changes I made were that used 1-1/2 cup sugar in the filling (2 tablespoons more than the recipe) and I added 1/2 teaspoon of vanilla to the meringue.,Everywhere I look, recipes specify 350 degrees but microwaves don’t get hot. When I make meringues they are crisp on the outside and soft inside. used a conventional oven last time at 120 degrees for 1.5 hours and it still didn’t go crisp inside.
