monterey jack cheese, cubed optional

    Southwest Salad with Cilantro Dressing, An excellent cool salad. It is make ahead and easy to make. The colors are very attractive, and the dressing is tart and tangy. You may also use the dressing on pasta or beans. Add grilled chicken strips for a complete meal, or Garbanzo beans, or try adding torn Romain lettuce just before serving., Delicious.I usually add red and orange peppers instead of the green and we always add avocado to the salad instead of cheese. The dressing is wonderful., We have made this salad about a dozen times so far. Love it.., Love, love, love this salad! So delicious and so filling. I find it a great “go-to” when trying to eat healthy and watch my weight.

    Combine All Ingredients, Except the Tomato, Add Dressing, and Chill Several Hours or Overnight.
