1 3/4 cups vanilla wafer crumbs (about 40 small wafers)
ground nuts or coconut, for rolling

This is my favourite recipe for rum balls as I'm ask to make it every Christmas. Sometimes I substitute the 2 eggs with 1/2 cup Simply 2% yogurt for my sports group where a player is highly allergic to eggs. When I do use eggs, I pasteurize them to be safe. I've had no problem either way. Thanks for sharing this recipe.

Combine Butter, Icing Sugar and Chocolate Chips in a Microwavable Bowl.

Microwave on Low to Melt - Do not Cook.

Stir in Beaten Eggs and Salt Until Thick and Smooth.

Refrigerate Until Mixture Is Stiff Enough to Form Balls (about 3 Hours).
