Hachis Parmentier (Mashed Potato Casserole), The French like their casseroles just like we do Easy & good , Even though we aren’t normally casserole eaters, we really enjoyed this flavorful & super easy dinner I didn’t have fresh tomatoes (I’d made a team salsa today & used them up) so I subbed a can of diced roasted garlic & onion flavored tomatoes & I left off the cheese on top as DH & DD can’t eat it it (the parmesan amount was fine though) I didn’t like the idea of all the grease so I browned the meat in one pan, drained it then added it to the onion, garlic, butter & oil that had been sauteeing Thanks for a nice, quick weeknight recipe, Jackie!
