Spinach-Broccoli Casserole, This is always a holiday request but great for anytime!, I am sure that this recipe is great for a quick casserole and tastes great too! I look at recipes to get ideas for fresh ingredients that I have left in the refrigerator and after searching for a broccoli, spinach and mushroom recipe I saw this one To make a long story short, the inspiration grew and I ended up with a delicious vegetable and orzo cheesy casserole using Ricotta cheese, Parmesan and an Italian blend cheese that I also had on hand used a small can of cream of chicken soup and sauteed chopped onions in lieu of the sour cream and onion soup mix I did top with the buttered crackers as in this recipe I know that this is a very different dish but find that it is interesting how another cook’s recipe can inspire and spark an idea to create , Yum! This is similar to other recipes here, but uses broccoli in addition to spinach, which is nice used a copycat recipe for the soup mix and it turned out great I added some whole wheat bread crumbs for the last 5 min baking time, for a little texture
