Zucchini Squash-Rice Casserole, , This recipe is delicious I make it as a side dish or add shredded chicken for a main dish It is time consuming with cooking down the zucchini and draining it but all well worth it I do disagree with the nutritional information A 7 ounce serving is closer to 300 calories than 200 hundred If you want to cut some calories, use egg beaters and take out the cheddar cheese It’s still good , This was okay, but for the effort I probably won’t be making again
