1 (3 ounce) box jello gelatin any flavor (we like raspberry)
1 (8 ounce) container cool whip
1 (15 ounce) can fruit cocktail or (15 ounce) can any fruit drained
1/2 cup walnuts (optional) or 1/2 cup pecans chopped (optional)

    I go to a Friendship Program during the day and one day a staff member had wanted to make a recipe that a companion for one of the other clients had given her & low & behold it was that recipe I have been thinking about looking it up for quite a while now or asking the staff member who has the class for recipe swap but I keep forgetting to do it. Finally I have looked it up.

    Cottage Cheese Fruit Salad,This is a light fruit salad that goes well with chicken or pork. The cottage cheese keeps it from being overly sweet. Please note prep time includes chilling time. Finally I have looked it up.,When I was a kid, my mom always made this with strawberry jello and frozen (thawed and drained) strawberries for bbqs and get togethers and it was always a favorite. Its pretty versatile in that by using a certain flavor of jello and particular fruit you can make different flavors. Just be mindful of the fact that some fruits hold a lot of water and might make your salad runnier (bananas can do this, and grapes when cut in half as well as most types of melon- all secrete water over time) and some fruits have acids that will break down the cool whip and also make it more watery ( pineapples and oranges). Sometimes the canned versions are ok but I drained them well and then pat them dry lightly with a paper towel to reduce that effect.
