    Date Filled Oatmeal Cookies, This makes a huge batch, cut the recipe in half if desired These cookies are best if they sit for a couple of days to soften They freeze well also From Company’s Coming Cookie cookbook , Since I’m a GF girl, I switched this out with my GF Allpurpose flour Works well any of your favorite none runny fillings work or just plain buttercream icing, My Mom’s recipe is half the size When I had my recipe site, I suggested substituting cranberries for the dates for less sweetness, and adding some orange rind I’ve also cooked the dates in orange juice instead of water and added juice from a third of a lime, and some vanilla–although Scotch whiskey would be appropriate It would save time to cut rectangles with a pizza wheel rather than the traditional rounds

    Cream Butter and Sugar Together Well.

    Slowly Mix in Milk.

    Add Remaining Ingredients.

    Roll Out Fairly Thin on Lightly Floured Board.

    Bake in 350f Oven For 8-10 Minutes.

    Fill With Date Filling, to Form a Sandwich.

    For Date Filling: Combine Dates, Sugar and Water in Saucepan.

    Bring to a Boil.

    Simmer, Stirring Often, Until Mushy and Thickened.

    Add More Water If Too Dry, or Simmer Longer If Too Runny.
