Crispy Coconut Pie, I received this recipe from a really good friend of mine She is a Cancer Survivor and gave me this recipe to put into a cookbook that we printed to raise money for The American Cancer Society It is really quick and easy and OOOOHHHHH SOOOOOOO GOOOOOOOOD!!!!!!, If you’re a coconut lover, this is absolutely wonderful! It was sooo easy to make I followed the recipe exactly using unsweetened coconut and it was just perfect I didn’t think the pie was too shallow It may be because used extra large eggs I wish I could have taken a picture of the whole pie because it really was picture perfect!
