Ingredients

12 large hard-boiled eggs, peeled
1 inch fresh gingerroot, peeled, finely grated
2 - 3 thin scallions, finely chopped
1 garlic clove, grated
1 tablespoon curry powder
3 - 4 tablespoons mayonnaise (just enough to bind)
salt and pepper
2 tablespoons red bell peppers, finely chopped
1 tablespoon fresh cilantro, finely chopped (or parsley)

Curry Stuffed Eggs

      These were a nice change of pace. I will cut the eggs differently next time. The recipe was reduced to 4 eggs. To have lots of stuffing I typically use an extra egg yolk and white finely diced. In this case used 1/2 an egg which gave me 7 halves. This is a perfect appetizer for a small gathering. Made for Aussie Swap.

      Curry Stuffed Eggs, , Loved this new and different twist on deviled eggs The filling had a good spicy taste I also piped the creamy filling back into the egg shell Looked very nifty I served these at a cook-out and they were very popular with the guests None were left, so that is always a good sign Thanks Nurse Di , Tried this recipe because I was looking for a different type of deviled egg The filling was very creamy and used my Pampered Chef thingy (can’t remember the name of it) to pipe the filling into the egg shells They turned out really great and had a spicy flavor that was unique Thanks for the recipe

      Cut the Fat Rounded Ends Off the Eggs, Scoop Out the Yolks Into a Bowl, and Stand the Hard Boiled Egg Whites Upright in the Egg Carton. If You Wish to Serve the Eggs on a Platter, Trim a Small Piece of Egg Off the Pointed Ends So They Will Stand Upright.

      Break the Egg Yolks Up a Little Bit Using a Frok. Add the Ginger, Scallions, Garlic, Curry Powder, Mayonnaise and Salt and Pepper. Mash Until Smooth and Adjust the Seasonings If Necessary.

      Fill the Egg Whites, Overstuffing Them a Little. Garnish the Eggs With the Red Bell Pepper and Cilantro. Enjoy!
