Flax Pancakes

I just love these pancakes sooo yummy, used just two eggs and full fat milk to make mine and they were so good, at first I thought that they were a bit runny but they turned out just fine. My protein powder is vanilla flavour, and I served them with yogurt and mixed berry compote. I am a bit ashamed to say I ate more than I should of but they were so good. this is going to be a regular dish for me. I was thinking I might try it in my waffle machine that would be great. Thank you for posting. Made for the diabetic forum. May 2011
