2 english muffins, split and toasted
6 tablespoons grated shredded provolone cheese or 6 tablespoons grated shredded sharp cheddar cheese

    Tuna Melt on English Muffins for 2, Fantastic lunch, even dinner with a bowl of soup., So simple and so good! As suggested, I served them with bowls of soup for a light supper when I was simply out of energy to do any complicated cooking. DH had never had a tuna melt before and was quite impressed with it. I added a little light mayo to the tuna, omitted the artichokes, threw in a few capers, spread it on whole wheat muffins and topped with cheddar cheese. Yummy! Thanks for sharing your recipe!
