Hearty Black Beans & Rice, A recipe from my college days, adapted from a friend. It’s very quick and made with inexpensive ingredients that most people will have on hand. This will make a filling, nutritious, low-fat dinner for 2 people if served with a green salad. If you have leftovers, an easy way to save them is to mix the beans and rice together before refrigerating. This mixture is awesome spread and , Enjoyed this very much. Perfect meal while homestaying the virus. I doubled the recipe, but cut back on the cinnamon and omitted the oregano. Oh…when sauteing the onions I also added a finely chopped sorrano., This was great! Hubby thoroughly enjoyed this and asked me to make it again. The only things I did differently was drain and rinse the beans too salty otherwise and used a can of diced tomatoes in place of chopped tomato. I have no fear using cinnamon in dishes and have used it in chili before. It definitely adds a delicious unique twist to this dish! Don’t be afraid to use it! All in all, this truly was awesome! This is a keeper!
