Prosciutto Wrapped Chicken

    I'm glad I read the reviews before trying this. I had 3 nice size chicken breasts. I pounded the chicken out slightly and made a pocket and seasoned both sides thoroughly with salt, pepper, garlic etc. I combined cream cheese, grated Parmesan and shredded Parmesan with some salt and pepper. I placed a nice slice of mozzarella in the pouch and filled in the rest of the pouch with the cream cheese mixture. I then wrapped each breast with 2 pieces of prosciutto. I put them on top of carrot wedges and peas and put them in a preheated 400 degree oven. I cooked them uncovered for about 40 minutes. It was a hit. I think I would cook for about 30-35 minutes next time and cover as well as flip the chicken as the prosciutto crisped a bit more than I wanted. Due to the fact I noticed drying I did add some chicken stock over the chicken twice during cooking why I'd flip next time.

I LOVED the idea of this- but the results were just… meh. The chicken definitely needs to be seasoned and maybe even tenderized flattened with a mallet? first. While the prociutto offered nice flavor and perhaps some juicyness to the chicken, it was definitely missing…. something even my 10 yr. old agreed- and only picked off and ate the prociutto to leave the chicken behind. Stuff with cheese? Yes, try it! Season the heck out of the breasts before adding the mustard? YES, herbs are a must! The ease of this recipe was just too good to be true. It definitely needed something else. It’s worth playing around with though!

    Preheat Oven to 200 Degree Celsius.
