Curried Stuffed Eggs, This is a recipe I got from a dear friend while she was on the Atkins diet. I just fell in love with the flavor. I now make them as an appetizer for Thanksgiving every year. I never make the old mayo mixture anymore. I hope you enjoy!, I just love curried eggs and these were great! Like others, I thought the filling was a bit dry so added about half again as much mayo., A nice subtle curry flavored deviled egg. use a homemade curry that is very hot and flavorful, so if you are using storebought, you might want to increase the amount and if you want it to really taste like curry – definitely increase it – I am not sure most people would, but it would be interesting to try. I thought the amount of mustard was just right, but did increase the mayo by about 4 times to get the right consistency.

Cut the Eggs in Half, Remove the Yolks and Place Them in a Bowl. |

Add the Mustard, Mayonnaise, Curry Powder, Cayenne Pepper, Salt & Pepper to the Egg Yolks and Mix Well. |
