Adjust Servings:
1/2 cup ricotta cheese
1/4 cup almond meal (for texture)
2 - 4 tablespoons heavy cream (depends on thickness you want)
1/4 teaspoon black pepper
salt, to taste
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
2 large eggs
1 tablespoon chia seeds (gives more "grit" texture)
1/4 cup shredded cheese (used colby jack)
2 tablespoons bacon bits (or sausage, or fresh crumbled bacon... whatever you like)
2 tablespoons sliced green onions, for garnish

    I really miss my stovetop grits casserole on low carb dieting, but since I have to make lifelong dietary changes, this is something I came up with as an acceptable alternative. used packaged bacon bits for this but you could use fresh cooked or sausage (yum!). Chia seeds are optional, but add a bit more of the "grit" texture I was looking for with this recipe.

    In Small Saucepan Over Medium Heat Combine the Ricotta, Almond Meal, and Heavy Cream (start With 2 Tablespoons and Increase as Needed For the Thickness You Want).

    Bring Just to a Boil, Then Whisk in Salt, Pepper, Garlic, and Onion Powder. Whisk in Eggs One at a Time, Letting Them Cook in a Bit Before Adding the Next.

    Whisk in Chia Seeds (if Using), Then the Shredded Cheese, Letting the Cheese Melt and Blend Into the Mixture Over Heat (reduce Heat If Needed as This Will Bubble and Pop as It Thickens While Cooking).

    Whisk in the Bacon, and Let Warm Through. Serve Hot, Garnishing With the Sliced Green Onion.
