Armenian Potato Salad

    Made this for a pot luck and everyone enjoyed. I was concerned that people would miss the mayo in the dressing but this was much better. The mint was a perfect amount. Very subtle. used fresh. The lemon juice did come through as a more dominant flavor but was very delicious. The olive oil contributed to it tasting rich and addictive. I think I added more salt than it called for.
