30 - 35 large fresh mushrooms
1/4 lb canadian bacon, diced
1/3 cup diced sweet red pepper
1/4 cup diced red onion
1 teaspoon minced garlic
1/2 teaspoon seasoning salt
1/2 teaspoon pepper
2 tablespoons vegetable oil
1/2 cup goat cheese or 1/2 cup feta cheese, crumbled
1/2 cup cheddar cheese, shredded

    I scaled this right back to serve four, with two mushroom caps each. Love all the ingredients in this. used two cloves of minced garlic just for my eight mushrooms and used feta. Next time, I'll add more garlic. My only addition to the ingredients was thyme. My fillings were perhaps - well, definitely! - on the generous side. I adjusted them by what looked about right. But I'd have to increase all of the ingredients quite considerably if I were - an unlikely event - to be making the large quantity specified in the recipe. I was pleased that this recipe used the stems. So many recipes instruct one to "discard the stems", which I never do anyway. A really enjoyable recipe to make and even more enjoyable to eat. My guests and I loved it. Thanks for sharing another great recipe, Lainey!

    Remove Stems from Mushrooms and Finely Chop; Set Caps Aside.

    in Large Skillet, Saute the Mushroom Stems, Bacon, Red Pepper, Onion, Garlic, Salt and Pepper in Oil Until Vegetables Are Crisp-Tender.

    Fill Each Mushroom Cap With About 1 T of Filling.

    Place on Foil-Lined Baking Sheets.

    Bake at 400 Degrees For 16-20 Minutes or Until Mushrooms Are Tender.
