Meatballs & Orzo, This is one of the very first dishes I made when I first got married and it is one of our top favorite dishes. It is a comfort food for me. It’s not a soup dish, it’s thicker than soup., Well, first I read the reviews and found a few with “good, but needs flavor”. So, with that in mind, I started with the trinity, not just onion. 2 parts onion, 1 part celery, 1 part bell pepper I also used the celery leaf : Next, after sweating the trinity, added cajun spice ~tbsp, and smoked paprika, 1/2 tbsp. 32 oz of beef stock, and a can of fire roasted tomato /w garlic. Salt and pepper to taste. Also added fresh basil and thyme from the herb garden, and whole wheat Orzo. It’s tasty I’ll tell ya whut! Might even add a dollop of sour cream to it and toss some fresh parsley on it. Definitely a keeper recipe.

In a Large Skillet, Saute Onions in Olive Oil Until Tender. |

Add Beef Broth, Bring to a Boil. |

Stir in Orzo, Meatballs and Tomatoes, Return to a Boil. |

Cover & Reduce to Medium Heat. Simmer For About 8 Minutes. |

Serve in Bowls, Sprinkle Grated Parmesan Cheese Ontop If Desired. |
