Mexican Tortilla Casserole

Features:
    Cuisine:

I hacked this recipe! I did use the springform pan - here's what I subbed in: - I reduced the flour tortillas to three, vs. four, based on the height of the spring form - I made spicy beluga lentils in place of ground beef and refried beans - used a can of fire roasted corn and fire roasted tomatoes - threw them liquid and all in a pan and reduced them until the liquid was very little, in place of the Mexican corn - I made basmati rice with hatch chili peppers with chicken broth - I caramelized one sweet onion - I over cheesed with about 3 cups! used pepper jack, cheddar, and provolone mixed - used a hatch chili salsa 1st layer: Tortilla, lentils, fire corn/tomato, rice, cheese - 2nd layer: the same but with salsa on the rice - 3rd layer: fire corn/tomato, caramelized onion, salsa, cheese It was MONEY.
