Ingredients

Adjust Servings:
4 cooking apples, peeled, cored and thickly sliced (granny smith or spartans are good, about 2 pds)
1 1/4 cups brown sugar, packed
1 tablespoon cinnamon
3/4 cup melted butter
2 tablespoons lemon juice
1 cup flour
1 cup whole wheat flour
2 tablespoons brown sugar (or more to suit taste)
1 tablespoon baking powder
1/2 cup cold cubed butter
2 eggs
1/2 cup half-and-half cream or 1/2 cup milk
2 cups shredded cheddar cheese (optional)

Apple Bake Casserole

    This is an excellent dessert. I did use 5 apples as the ones I had were on the small side - and only all-purpose flour (no whole-wheat flour in my pantry). I had decided I was going to use the cheese as I have always loved a slice of cheddar with my apple pie but, instead of sprinkling the cheese on top of the dessert after it has finished baking, I actually incorporated the grated cheese (not quite 2 cups) into the biscuit batter, which actually worked really well. I think you could easily cut out a 1/4 cup of the sugar added to the apples and I found that all the juice emitted by the apples was absorbed into the biscuits, so I don't thick any extra flour is necessary as thickener. This is really an apple cobbler - very easy to make and absolutely divine served with some heavy cream poured over top. Thanks Kitten - we have another keeper here.

    Set Oven to 350 Degrees.

    Butter a 7 X 11-Inch Baking Pan.

    in a Bowl, Toss the Sliced Apples With the Brown Sugar, Cinnamon, Melted Butter and Lemon Juice; Set Aside.

    For the Batter, Combine the Flours, Brown Sugar and Baking Powder in a Food Processor.

    Add the Cold Butter, and Pulse Until Mixture Resembles Oatmeal.

    Whisk the Eggs With the Milk and, With the Motor Running, Add to the Flour Mixture (just Until Combined).

    Drop Half of the Batter by Spoonfuls, Into the Prepared Baking Dish.

    Drop Dollups of the Remaining Mixture Over the Apples.

    Bake For 35-40 Minutes, or Until Apples Are Tender, and the Topping Is Bubbly.
