Asparagus In Paradise

    When I tagged this recipe for Veg Tag/May I forgot that asparagus is out of season now. Not to worry, I subbed broccoli. Super quick to make and we liked it spooned over jasmine rice. The grains of paradise was coarsely ground in a pestle and mortar first and I cheat with lemongrass using a lemongrass puree in a tube from the grocery store. Used standard salt, too. I got a kick out of the recipe's name! Subbed grapeseed oil for olive oil because it has a higher smoke point. The garlic was added only the last 1 minute of stir frying. Good stuff!

    In a Hot Pan Heat Enough Oil to Coat Bottom of Pan Add Almond and Stir For One Minute. Remove Almonds and Set Aside.

    Add Remaining Ingredients to Pan and Stir Fry Till Asparagus Is Just Tender. Add Back the Almonds and Stir to Combine. Enjoy.
