Iconic movie star Audrey Hepburn is known for her ability to find beauty in simplicity. This philosophy shines through in her acting, but what many don’t know—or at least, what I didn’t know—is that it also was reflected in her cooking.
In the kitchen, she was known for her minimalistic, yet still delicious, recipes. One of them is her favorite four-ingredient summer dessert. This dish is so simple that its main ingredient of fresh peaches is undoubtedly the star. Why add too many frills when peaches are already so juicy and delicious on their own?
For this easy, fresh dessert, Hepburn lets the ingredients do all the work. On a lazy summer evening, I can’t imagine a better treat to toss together and enjoy. It’s bound to be your new go-to recipe when you are craving something sweet and easy.
Audrey Hepburn’s 4-Ingredient Fruit Salad
In his book, “Audrey At Home: Memories of my Mother’s Kitchen,” Hepburn’s son, Luca Dotti, shares memories from his mother’s kitchen, including her favorite summer peach dessert.
As Instagram user @telloandrose shares in a video of the recipe, Hepburn used to barter with her neighbors for fresh peaches for her family to enjoy on their patio in Switzerland after dinner.
While I don’t have a patio in Switzerland to enjoy my dessert from (but one can dream, right?), this recipe is still the perfect way to end any summer night. Because it is so easy, it is also incredibly versatile—you can make it to impress guests at a dinner party or throw it together as a treat to enjoy on your own.
How To Make Audrey Hepburn’s Peach Salad
To make this dish, Hepburn would peel six peaches and slice them into wedges. Then, she would toss the wedges with three tablespoons of sugar and the juice of one lemon. After the peaches marinated for an hour, she would top them with fresh mint leaves and serve on a platter.
While this recipe is perfect all on its own, I would be remiss not to point out all of the upgrade possibilities. As one user commented on @telloandrose’s Instagram post, this peach salad would make a wonderful filling in a peach pie. I also think it would pair well with some fresh whipped cream or vanilla ice cream. You also could always add any extra seasonal fruit you have sitting in the fridge, such as strawberries or cherries.
But, on a summer night when you don’t feel like doing anything but lounging on the porch and enjoying the extra hours of sun, I still support skipping the adaptations and keeping this recipe as simple as possible. That is what Hepburn intended, after all.
