    Preheat Oven to 400f.

    Peel and Mash the Yams.

    Mix in Brown Sugar, White Sugar, Egg, Evaporated Milk, Vanilla, Maple Flavoring, Salt, and Butter.

    Pour Into Greased Baking Dish (9" X 11" or 7" X 10" Work Best).

    For the Topping: Mix Together 3/4 Cup Brown Sugar and 2 Tbsp of Flour.

    Melt the 1 Stick of Butter, and Pour Onto the Casserole.

    Crumble the Brown Sugar and Flour Mixture Over the Top of the Casserole.

    Bake Uncovered at 400 F For 30 - 45 Minutes or Until Sides Are Brown and Bubbly.
