    I was in a great hurry to make a side dish, but was in the mood for stuffed tomatoes, so I threw this together and we really enjoyed it. You could top this with more cheese, or increase the amount of bacon. I can't wait to make this with the tomatoes ripening in my garden now!

    Preheat Oven to 350.

    Chop Tomatoes and Mushrooms and Saute in Olive Oil Over Medium Heat Until Tomatoes Are Cooked Through. Stir Only Occasionally. Next Time I May Saute Them in Bacon Grease!

    While Tomatoes Are Cooking, Mix Sour Cream, Cheese, Onions (or Chives and Onion Powder), Garlic and Bacon.

    Add Mixture to Tomatoes in Pan, Bring Just to a Boil and Remove from Heat.

    Immediately Pour Into a 7x9 Casserole Dish and Bake For 20 Minutes at 350, Then Broil For 5 Minutes.
