Baked Old Fastioned Oatmeal

    This is a versatile recipe which my family really enjoyed! I doubled the recipe for a 9x13 dish. I replaced the applesauce with greek yogurt, added a little maple extract, some cinnamon and nutmeg, 1/2 cup of ground flax seed and 1/2 cup of finely shredded unsweetened coconut. Took about 50 minutes to bake through and was moist, not dried out. Topped with thickened peaches and blueberries. Leftovers are in the fridge for breakfast tomorrow. The kids can break it up and eat it warm or cold with some milk over it if they want. VERY TASTY and smelled heavenly baking. Will make again and love that I can experiment with add-ins.
