Blueberry Muffins

    UPDATE - I made these again 1.5X ingredients and there were 24 muffins - and quite a bit of blueberries - I would definitely back it down a bit - next time on the blueberry if you enjoy having 'cake' with your blueberries.... I made these - used king arthur fiori di scilioa (however it is spelled) which is a lemmony flavory instead of the vanilla. used way more than 2C of blueberries as I had so many and the husband said it was too many. So - mind the 2C note - no matter how many blueberries you have. Also - I cooked it on convection 325 for 30 minutes and it was the correct temp / time.

    Grease 12 Cup Muffin Pan.

    Preheat Oven to 375.

    in Large Bowl With Mixer at Medium Speed, Cream Butter and Sugar Until Light and Fluffy.

    Add Eggs One at a Time, Beating Well After Each Addition.

    Combine Flour, Baking Powder and Salt.

    Add Alternately to Creamed Mixture With Milk and Vanilla.

    Crush 1/2 Cup Berries and Add to Batter.

    Fold Remaining Berries Into Batter and Spoon Into Muffin Pan.
