Cauliflower Casserole

    This was a great recipe just tweaked it a bit. I added herbed goat cheese, herbed feta, parm and white sharp cheddar. I also saut the onions and peppers (red) with a little bit of good butter for about 5 min. Used Italian croutons with crackers crushed. Sour cream and Greek yogurt. I also added smoke paprika. It was delicious.

    Cauliflower Casserole, , Good way to use up that cauliflower I would suggest next time using only egg whites and beating them stiff, then folding them into the mixture That way, the casserole will be a big lighter and not as heavy

    Put Cauliflower in Saucepan, Add 1 Cup Water, Cover and Cook on Med For 8 Minutes.

    Drain.

    Mix Cauliflower With Sour Cream, Cheddar Cheese, Crumbs, Pepper, Onions, and Salt.

    Put in Greased 2qt Casserole.

    Sprinkle With Parmesan.

    Bake, Uncovered at 325* For 30 Minutes.
