    Excellent! I've made cheese wafers before but usually with cayenne. Old Bay is such a wonderful, and I believe better, addition. Very easy and go together quickly. Will work best with cheese that is freshly grated, not the pre-grated stuff that comes in a bag. used pumpkin cookie cutters and will add this recipe to my Halloween cookbook. It's great to keep in mind for Fall, Thanksgiving, or Longhorn football parties:) since the crackers are a lovely burnt orange color. Also a great addition to school lunches and a nice source of protein for my picky child. I look forward to trying your Tomato Lime Pesto as suggested. It sounds fabulous as well.     Preheat Oven to 400 Degrees F.

    in a Food Processor or Standing Mixer, Blend Together the Cheese, Butter, and Old Bay Seasoning Until Smooth. Gradually Add the Flour and Mix Thoroughly to Form a Dough. Shape the Dough Into a Ball; If It's Crumbly, You May Need to Squeeze It Together With Your Hands.

    on a Lightly Floured Surface, Flatten the Ball and Use a Rolling Pin to Roll the Dough Into a 1/4-Inch Thickness. Cut Out Shapes With the Cookie Cutter of Your Choice and Place on an Unoiled Baking Sheet About an Inch Apart. Bake For 10 Minutes, or Until Lightly Browned on the Edges and Bottom. Remove from the Oven and Let Cool on a Wire Rack.
