    The first time I made this recipe a new boyfriend was visiting. This soup comes together quickly if you have all the ingredients ready. I asked my new friend to zest the lemon and chop the cooked chicken into bite sized pieces. I quickly threw together Irish Soda bread and popped it in the oven. The bread and soup were ready at the same time and Oh,My....he was so impressed. He loved the taste of lemon in the soup and so did I. I have now made this soup 4 times. I make it exactly as written... IT's definitely a favorite.

    Heat Oil and Slowly Cook Onion, Carrot and Celery Over Medium Heat For Approx 8 Min Until Soft.
