Corn and Black Bean Quesadillas, A recipe I found in the HomeBasic, Winter 2007 I have not tried it so I took a guess for the preparation and cooking time , Enjoyed this vegetarian dish Halved the recipe but used 3 times the amount of cheese Next time will try with a bit less mayo and more salsa, Mexican food is by far my favorite one and I can eat quesadillas all day long This recipe is pretty easy to make, I guess its possible to substitute the frozen corn with canned one
