Creamy Mixed Vegetable Curry – Restaurant Style

Features:
    Cuisine:

Wonderful flavor! I was really able to come close to making that same wonderful dish I had in Mysore, India.
I did not cook mine in the microwave. I did it all on the stovetop. I cooked instruction #1 on Medium until quite soft, then let it cool a couple minutes before pureeing in food processor. Before returning it to the pan, I cooked #3 for 1 minute on Med-HI (substituting fenugreek seeds for the cumin seeds) then added the puree. used different vegetables than the recipe, adding potatos first and when they were almost done (about an hour), added green beans, carrot, red bell pepper, and half of a hot pepper and cooked for about 20 minutes. Added step #8 and cooked for 15 minutes. Did not garnish, served over basmati rice.
I had to use fenugreek seeds since I could not find leaves nearby.
Overall, this took a couple of hours. Everyone loved it and I will make it this way again. Will get some paneer for next time. Made 6 servings.
