    Hard Boil the 12 Eggs and Separate the Egg Yolks.

    in a Separate Pan, Boil the Red Potatoes Until Tender. Let Cool While Assembling the Filling.

    Separate the Egg Yolks from the Whites and Mash in a Bowl With a Fork.

    Add the Mayonnaise, Dijon Mustard and Season With Salt & Pepper. Stir Well to Combine.

    Put the Egg Yolk Mixture Into a Piping Bag and Let Chill.

    Cut the Potatoes in Half Length Wise. Scoop Out a Small Well For the Filling, About a Tea-Spoon Size.

    Pipe the Yolk Filling Into the Potato. Top With Paprika and Chives to Taste.
