Adjust Servings:
1 teaspoon vegetable oil
1 (15 ounce) can chickpeas, preferably organic
1/2 cup onion, chopped
2 - 4 garlic cloves, minced
1 teaspoon coriander
1/2 teaspoon curry powder (used penzey's balti curry powder)
1 teaspoon cumin
1/8 teaspoon cayenne or 1/8 teaspoon red chili powder
1 tablespoon lemon juice (to taste)
1/4 - 1/2 cup fresh parsley or 1/4-1/2 cup fresh cilantro, chopped

    Saut the Onions in the Oil For About 5 Minutes.

    Add Minced Garlic and Spices and Saut Another 2 Minutes or Until Fragrant.

    Be Sure to Keep Stirring to Avoid Sticking or the Garlic Getting Too Dark.

    Drain the Chickpeas, Reserving Their Liquid.

    Add Them to a Blender or Food Processor With Just Enough Liquid to Blend.

    If Using a Blender, Like I Have, Be Patient, and Keep Scraping Down the Sides.

    Once Chickpeas Are Somewhat Smooth, Add the Sauted Onion, Garlic and Spice Mixture from the Stove and Blend Until Combined.

    Scrape Into a Bowl and Add Lime/Lemon Juice If Using, and Fold in Fresh Parsley or Cilantro.
