Ingredients

Adjust Servings:
1 cup oats, soaked in both
1/2 cup orange juice, and
1/2 cup boiling water, for 15 minutes
1/2 cup margarine, softened
1/2 cup white sugar
1/2 cup brown sugar
2 eggs, beaten
1 cup raisins
1 teaspoon vanilla
1 cup all-purpose flour

    Oatmeal Orange Muffins,I love the orange flavor of these, different for a muffin. Yummy! I got this recipe from an old (1980’s) Canandian cookbook called “Muffin Mania”. I usually double or triple the recipe and freeze the extras.(Prep time includes soaking time.),I didnt have brown sugar so substituted with more white.     Cream Margarine and Sugar.

    Beat in Eggs and Stir in Oat Mixture.
