    Pacific Rim Chicken Burgers With Ginger Mayonnaise, This recipe came from Kristine Snyder, Kihei, Hawaii, and was the $25, 000 grand prize winner in the National Chicken Cooking Contest., Very good – something different. Would definitely make again. Did not have panko so used just regular bread crumbs. Thanks for sharing., My family and I really enjoyed this dish a lot! It has been deemed a “keeper”! I followed this recipe almost to the T, with the exception of using 1/4 yellow onion, finely minced instead of the green onion as I didn’t have any green onions on hand. We doubled this recipe and I’m so glad that we did since one day later, there’s only ONE patty left! Our patties were pretty thick about 3/4″ – 1″ so I cooked them in the pan for about 15-20 minutes instead of the 10 minutes mentioned in the recipe. We liked the ginger mayo too but I think next time I will cut back just a bit on the lime juice as it is VERY strong in my opinion. Thanks for the great recipe!

    Ginger Mayonnaise: Mix 1/2 Cup Mayonnaise, 2 Teaspoons Sweet Pickle Relish, 2 Teaspoons Minced Fresh Ginger, 2 Teaspoons Lime Juice, 1 Clove Garlic, Minced and 1/4 Teaspoon Salt in a Small Bowl.
