Passion Fruit Vinaigrette

    Excellent. Light and refreshing with just a hint of tangy fruitiness. I serve simply over chilled iceberg lettuce tossed with halved cherry tomatoes, diced orange sweet bell peppers and purple onion, then top with diced blackened chicken, chopped green onion, crumbled gorganzola cheese and salt and pepper to taste. Occassionally, if I am in the mood for more spice than the seasoning on the chicken, I may replace the orange bell pepper with, or add, chopped aneheim or other hot pepper (left up to the preparers taste I suppose). This creates a wonderfully complex blend of sweet, spicy and fruity. The gorganzola adds just the right amount of savory to enhance the other flavors. A very healthy, yet satisfying, summer meal for an individual or as a starter for company. Very good!
