Pineapple Stuffing

    My mom made pineapple stuffing at Easter for several years before she passed - and though it was not my favorite - I continued making it after she died 5 years ago. But this year I was not at home for Easter due to the pandemic and I had to find a recipe on line. I liked this one s much better than the one she used to make. I did make some tweaks - I did 8 slices of bread because 5 did no seem to be enough...but I also added a 32oz can of drained pineapple instead of a smaller can. It was delicious! The top browned nicely and the rest was light and fluffy, but not wet. I will use this recipe going forward.

This one had way too much butter. It was all I could taste. Gross. I threw it out. Fortunately it didn’t call for a lot of ingredients that I wasted money on.

    Cream Butter and Sugar.

    Place in 1 1/2 Quart Casserole Dish.

    Bake 1 Hour at 350 F Degrees.
