2 cups japanese eggplants, cut in fourths lengthwise,then cut crosswise into small chunks
1 lb lean ground turkey or 1 lb lean ground chicken
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 (8 ounce) can tomato sauce
1 tablespoon light butter
2 large eggs
1 cup skim milk
1 cup flour

    Coat a Large Skillet With Cooking Spray.

    Heat Over Medium-High Heat.

    Cook, Stirring, 5 to 7 Minutes or Until Onion Is Softened and Eggplant Is Golden Brown.
