    In a Saucepan, Heat Oil and Butter Over Medium Heat.

    Add Squash and Garlic and 1 Teaspoon Salt and Cook, Stirring, Until Squash Is Caramelized, 10-15 Minutes.

    Add Broth and Bring to a Simmer. Reduce Heat and Boil Gently Until Squash Is Falling Apart, 15 Minutes.

    Add Syrup, Sage and T Pepper.

    Transfer to a Blender and Puree Until Smooth.

    Variation: Garnish With Pesto Oil.
