    Acorn Squash Stuffed With Sausage and Sour Cream, I’m not a big fan of acorn squash, but I really like this recipe from my mother-in-law., This was really good. We will make this again. I made the recipe as written but added a sprinkle of Parmesan cheese on top., I only used one squash because there was only two of us for dinner tonight. We thought it could use a little seasoning, which could be solved by using a spicier sausage. We just added a little garlic salt, onion salt and pepper. That did the trick! We both enjoyed it.

    Cook Sausage, Onion and Mushrooms in Butter in Skillet.

    When Squash Is Done Baking and Cooled Slightly, Cut in Half and Scoop Out Seeds.

    Add Sour Cream to Sausage Mixture.

    Place in Baking Dish. Return to Oven and Bake For 20 Minutes at 350 Degrees.
