    I love the groundnut (peanut) stews of West Africa; this recipe comes from Lesotho -- I hadn't realized that they used groundnuts there as well! This could be a side dish, but I served it tonight over brown nice and was a perfect one-dish meal.     Cook and Stir Onion and Pepper in Oil in a 3-Quart Saucepan Until Onion Is Tender.

    Add Tomato and Spinach. Cover and Simmer Until Spinach Is Tender, About Five Minutes.
