Alaskan Smoked Salmon Spread

    Made for PAC 2010. Nice recipe. If you don't like lemon start out with 1 tablespoon. used all the lemon but also - almost 2 cups of salmon. I like a fish spread to have lots of fish, so I did use almost 2 cups and I too also used all the lemon, but some may not want all that lemon. It can over take a dish if you are not a lemon fan. I would suggest altering the recipe to say 1-2 tablespoons of lemon so the chef knows. I did love the capers in the dish, a nice salty component. I didn't use the white pepper, just black. I am not a fan of white pepper. It is a similar taste to black, although a bit stronger, but I didn't see any reason to use it, so used what I hand on hand. Capers and Onions are a key to the spread.
