1 teaspoon ginger grated
3 garlic cloves crushed
3 bay leaves
14 ounces crushed tomatoes
1/4 teaspoon ground turmeric
1/2 teaspoon chili powder
1 teaspoon ground cumin

Ande Ki Kare Curried Eggs

    This was a very nice hot dish to have as a light lunch. We served on toasted rye bread to soak up the sauce. A nice heat kick , however found that the garam masala was a bit too much for our tastes & will cut back next time. But really liked how quick it was to make with spices that I normally keep on hand. Thank you Cluich. Made for PAC 2009

    Heat the Oil in a Saucepan. Add the Onion, Ginger, Garlic, and Bay Leaves, and Cook For Four Minutes, or Until the Onion Is Soft. Add the Tomato, Turmeric, Chili Powder, Cumin, Coriander, 1 Tsp Salt, and 1 Cup of Water.

    Bring to a Boil, Then Reduce Heat and Simmer For Three Minutes.

    Add the Garam Masala and Eggs, Then Simmer For a Minute or Two to Warm the Eggs.
