4 boneless skinless chicken breast halves, pounded to 1/4 inch thickness
2 tablespoons olive oil
1/4 lb mozzarella cheese, thinly sliced
2 tablespoons olive oil
1 medium onion, chopped
1 clove garlic, crushed
1 cups chopped peeled fresh tomatoes or (28 ounce) can peeled italian tomatoes, drained and chopped
2 tablespoons tomato paste
1 bay leaf
1/2 teaspoon sugar
1/4 teaspoon dry oregano

    This is one yummy and easy recipe. use seasoned or plain panko adding italian seasoning, It's all in cooking the chicken properly, don't overcook , as it will also bake in the oven. use chicken tenders, which are easier to prepare, not to mention, without pounding out the chicken.I would suggest doubling the sauce if using two packs of tenders. Great leftovers.
